Turkey Time

Ingredients

1Turkey 2Sticks Butter (room temprature) 1Package Fresh Poultry Seasoning Herbs (thyme,rosemary,sage) - usually 2 of each in each package 2Tablespoon salt 2Tablespoon pepper 2Tablespoon garlic powder 8ozBottle lemon juice 1 large paper bag, big enough to fit bird (no handles)

Method/Directions

Night Before

  • Thaw Turkey using what ever methods works for you (We use the cold water in cooler method 30mins per pound)
  • Wash Turkey in lemon Juice
  • Pat Dry with paper towel
  • Season bird both outside and inside cavity with pepper, garlic powder, salt

Turkey Day

  • Adjust oven rack to fit height of roasting pan and Turkey
  • Preheat oven to 325 degrees
  • Create Aromatic Bomb
  • Take herbs out of package and divide evenly into two piles
  • Take one pile and chop into fine pieces
  • In a bowl, mix chopped herbs and 1 stick of butter
  • Place paper bag on counter, partially unwrap butter and smear butter inside of paper bag (IMPORTANT all of the inside must be covered with butter)
  • Use fingers to seprate skin from breast of bird
  • Use hand and stuff herb butter mixture underneath the skin
  • Place bird in Bag (see images below)
  • Place bird bag in roasting pan (recommend roast pan with a roasting rack or roasting tray with roast tray)
  • using hand take other pile of herbs and stuff turkey cavity
  • Using tongs stuff Aromatic Bomb into cavity of Bird
  • using what is left of Butter, rub it all over the bird
  • Insert Thermometer Probe into Turkey breast area
  • Close bag tight
  • Place Roasting pan with bird in oven and cook per directions or until Thermometer reads Internal bird temprature of 170 degrees
  • Take Roasting Pan with Bird out of oven, place on heat resistant surface
  • Check Bird for adequate browing (if not browed see tip below)
  • Use aluminum foil and tent bird, let it rest for 15 to 20 mins
  • Gravy, Gravy, Gravy time - remove foil, using gloves, tongs move Roasting rack / roasting tray from pan and place on large cutting board or another pan, recover with foil
  • Create BettyK Easy Gravy
  • Remove foil tent,rip off top of bag, Carve the Bird and Enjoy

TIPs:

  • For paper bag, use grocery bag
  • If Turkey is not browned well enough, increase Oven temo to 400 degress, rip of top of bag exposing bird, sprinkle paprika on the not browned areas and place back in oven,start checking every 3 mins until browning is achieved
  • Carving Bird: on one side of the bird using carving knife make a horizontal cut near the bottom of the breast, slice until you hit bone, then start cutting vertical slices not to think and not too thin, outside in
  • You can use this method for just a Turkey Breast, or Whole Roasting Chicken
