MUM'S RICE AND PEAS

Ingredients

1Can (15oz) red kidney beans (peas) or Black Beans 1 ½Cups (14oz) Fresh coconut milk 1 ½Cup Rice Washed and drained 1 Clove garlic Crushed 1Stalk of scallions Chopped 1Sprig of thyme 5Pimento berries (allspice) 1Scotch bonnet pepper Don't cut or burst 2tsp Salt or to your taste 1 1/2Cups Water

Method/Directions - IN POT

  • Add first 7 ingredients (up to Scotch bonnet pepper)
  • Add water make sure liquid is 1 inch above rice
  • Stir well, add Scotch bonnet pepper and bring to a boil
  • Reduce heat to low, cover with lid, simmer for 20 mins or until rice is tender and liquid is absorbed
  • Remove thyme and pepper then serve

  • Add first 7 ingredients (up to Scotch bonnet pepper)
  • Add water make sure liquid is 1 inch above rice
  • Do not stir, add Scotch bonnet pepper, Press “Manual” or “Pressure Cook” on the Instant Pot and set for High pressure for 6 minutes.
  • Once the pressure-cooking time is done, allow it to natural release for 10 minutes, then quick release any remaining pressure by moving valve to "Venting"
  • Open lid and remove thyme sprigs. Fluff rice with fork and Server
