Grandma Ena's Orange Suprise

Ingredients

3Medium Sweet Potato 1 12 oz can Crushed Pineapple 3 Tablespoons Brown Sugar (to taste) 2 Tablespoon Butter 1/2Teaspoon Cinnamon (to taste) 1/2 Teaspoon Nutmeg (to taste) 1 Bag Mini or Big Marshmallow

Method/Directions

  • Pre-Heat Oven to 250 Degrees
  • Peel and cut Sweet Potato into medium size pieces
  • Place potatoes in pot
  • Fill pot with water to cover potatoes
  • Boil potatoes in pot until fork tender
  • While potatoes boil, butter inside of oven safe dish
  • When are ready, drain water, and mash potatoes in pot
  • Add Butter, and Brown Sugar then Stir
  • Add Pineapple, Cinnamon, and Nutmeg then Stir
  • Pour in Mixture into oven safe dish
  • Place marshmallows on top
  • Put dish in oven for 10 minutes or until marshmallows melt and have a light golden brown color
