Grandma Ena's Orange Suprise

Ingredients
3Medium Sweet Potato
1 12 oz can Crushed Pineapple
3 Tablespoons Brown Sugar (to taste)
2 Tablespoon Butter
1/2Teaspoon Cinnamon (to taste)
1/2 Teaspoon Nutmeg (to taste)
1 Bag Mini or Big Marshmallow
Method/Directions
- Pre-Heat Oven to 250 Degrees
- Peel and cut Sweet Potato into medium size pieces
- Place potatoes in pot
- Fill pot with water to cover potatoes
- Boil potatoes in pot until fork tender
- While potatoes boil, butter inside of oven safe dish
- When are ready, drain water, and mash potatoes in pot
- Add Butter, and Brown Sugar then Stir
- Add Pineapple, Cinnamon, and Nutmeg then Stir
- Pour in Mixture into oven safe dish
- Place marshmallows on top
- Put dish in oven for 10 minutes or until marshmallows melt and have a light golden brown color
