Cracy Good Custard

Ingredients
3Cups Half and Half
4Large Eggs
1/2 Cup Light Brown Sugar
1 1/2 Teaspoon Vanilla Extract
1/4Teaspoon Cinnamon (to taste)
1/4 Teaspoon Nutmeg (to taste)
2 Tablespoon Rum
Method/Directions
- Heat Oven to 350 Degrees
- In large heat-proof bowl, add eggs, sugar, extract, cinnamon, nutmeg, and rum
- Use fork / flat spatula to completely combine ingredients, set aside
- Place empty oven-proof custard dish in a oven-proof larger dish
- Add water to larger dish until it comes to 1/2 level of custard dish
- Remove custard dish and pour water into microwave safe bowl or pot
- Warm water until boiling
- Heat half and half to 180 degrees (see methods below)
- Temper the egg mixture by adding a little of the hot half and half to the egg mixture while mixing with the fork. Keep on adding half and half until completely combined
- Put oven-proof larger dish in oven
- Place oven-proof custard dish in larger dish
- Pour custard mixture into custard dish
- Pour hot water into larger dish. Reminder: fill to 1/2 of top custard dish
- Close oven
- Bake for 40 minutes or until the knife comes out clean when you put it in the center of cooked custard
- Carefully remove custard dish
- Let cool for 30 minutes
Heating Up Half & Half Methods
Stove Method
- Add half and half to pot
- Set stove heat to medium
- Check temprature every 2 mins with thermometer, and stir with spoon
- When temprature reads 180 degrees take off heat
Microwave Method
- Add half and half to microwave safe bowl
- Heat for 1 minute increments until temprature reaches 180 degrees
- Remove from microwave (WARNING: Bowl will be hot)
